Les cannelés de ma maman/ my mum's cannelés



Cela fait un petit moment que je n'ai pas posté d'article sur le blog, vacances au soleil obligent :)
Le froid et la grisaille semblent s'être durablement installés, c'est pourquoi, je vous propose aujourd'hui une recette pleine de beurre pour faire les réserves hivernales..
Il s'agit des cannelés de ma maman, ils font à coup sûr l'unanimité et comme je suis sympa, je vais les partager.
Le secret est dans la cuisson qu'il faut respecter à la lettre pour obtenir des cannelés à la fois moelleux et croustillants.


 


 Pour 16 cannelés bordelais:

- 50 cl de lait
- 1 pincée de sel
- 2 œufs entiers
- 2 jaunes d'oeufs

- 1/2 gousse de vanille
- 3 cuillères à soupe de rhum
- 100 g de farine
- 200 g de sucre en poudre
- 30 g de beurre

- un moule à cannelés (le regard ébahi de vos convives vaut l'investissement)





Faire bouillir le lait avec la vanille et le beurre.
Dans un saladier, mélanger la farine et le sucre puis incorporer les œufs, verser ensuite le lait bouillant.
Mélanger doucement afin d'obtenir une "pâte à crêpes", laisser refroidir, puis ajouter le rhum. 
Laisser reposer une heure au réfrigérateur.
Préchauffer le four à 270°C.
Verser la pâte bien refroidie dans les moules, en ne les remplissant qu'à moitié.

Disposer les cannelés sur la tôle du four chaud à 270°C pendant 5 minutes, puis baisser le thermostat à 180°C et continuer la cuisson pendant 1 heure : vos cannelés sont prêts lorsqu'une croûte brune s'est formée à l'extérieur et que l'intérieur est encore moelleux.
Démouler encore chaud et laisser refroidir.

Les plus gourmands accompagneront les cannelés d'une crème anglaise...

Long time no post, I know but you know how French people are often on holiday!
With the winter coming, nothing is better than warming up with delicious small cakes.

Today, I'm sharing with you my mum's recipe of Cannelés from Bordeaux, yummy (and fatty I know) small cakes that everybody love!
The recipe is quite easy -you just have to do a batter- but the most difficult part is the heat.
Cannelés should be crusty outside (not burnt) and soft inside (not liquid). To success the cooking, just follow the instructions!




 For 16 cannelés:
- 50cl of milk (2 cups)
- 30g of butter (3 tablespoons)
- 1 vanilla bean
- 100g flour (3/4 cup)
- 200g of powdered sugar (2 cups)
- 1 pinch of salt
- 2 egg
- 2 egg yolks
- 3 tablespoons of rum
- cannelés mold






In a saucepan, bring to a boil the milk, butter, and vanilla bean.
Stir the flour, the salt and the sugar together in a large bowl. Then, stir the eggs into the flour mixture. Next, add the hot milk, and mix gently until your mixture look likes a crepe batter.
Leave the batter to cool and then add the rum.
Let it sit in the refrigerator for one hour.
Preheat the oven to 500°F.
Fill the cannelés mold half way to the top.
Put the batter into the cannelés mold, and bake them 5 minutes at 500°F then reduce to 350°F and continue baking for one hour. 
When the cannélés are dark brown and crunchy on the outside and soft on the inside, they're ready to be removed.
You can add custard for greedy guests!
